Cake bakers I need your help

So it's baby Ds birthday on tuesday and as she is only one we are having the party tomorrow (she doesnt know the difference)


I've just baked an experimental cake the experiment being the cake is the squidgey chocolate cake from delias Chocolate book with cornflour replacing the cocoa powder(the cake has to be gluten free), now I've just tried it and basically it worked but I found quite an eggy bit at the bottom of the sponge, I think it maybe because the mixture had settled a little before I baked it, does anyone think it may because I used cornflour? I need to know quickly as I'm making the actual cake tomorrow and I dont know if I should just sack it and make a normal cake (this means my husband cant have any) or risk it it might work.

Bit confused here- does pure cocoa powder have gluten in it? In all the recipes for cornflour cakes that I know, the cornflour is in place of ordinary flour, but they all have a bit of ordinary flour in as well. I think you can make cakes with all cornflour, but you have to use quite a bit of baking powder. Sorry that doesn't sound very useful really! Mum White

ah I'm replacing the cocoa with cornflour because I just want a plain cake(and no cocoa has no gluten in it) its quite a small amount (2oz to 6 eggs) so I'm not sure if I'd need the baking powder but definately something to think about cheers
